Instructions

  1. Spun Sugar
How to make spun sugar on the stovetop: Pour a cup of granulated sugar into a nonstick skillet and heat over medium-high heat. Do not stir. After about a minute the sugar should begin to melt. As it begins to caramelize, tilt the pan over heat so sugar begins to mix together. Gently mix with a wooden spoon to speed up caramelization process. Once sugar has fully dissolved, remove skillet from heat and wait for about a minute for sugar to turn slightly thick and syrupy. Using a fork, drizzle caramelized sugar over parchment paper (syrup should start to form thin “wires”) in a design of your liking and, once dry, peel off of paper and carefully place on top of flan.
How to make spun sugar in the microwave: Pour a cup of granulated sugar in a glass Pyrex measuring cup or microwave-safe glass bowl (will need to withstand very hot, boiling liquid). Put enough water in the sugar to thoroughly wet it (about 3 tablespoons) and lightly stir with a fork. Prepare an ice water bath in a medium-sized bowl and set aside. Microwave cup of sugar on high for about 5 minutes or until sugar starts to caramelize, turning an amber color. Remove from microwave immediately (or else it will burn) with oven mitts and place cup in ice water bath to cool. Once caramelized sugar begins to thicken after a few minutes, use a fork to drizzle caramelized sugar over parchment paper (syrup should start to form thin “wires”) in a design of your liking and, once dry, peel off of paper and carefully place on top of flan.
  2. Cocoa with Chocolate Lattice and Chocolate Drizzle
Top flan with cocoa powder and a chocolate syrup drizzle. Melt baking chocolate in the microwave. Using a spoon or a piping bag, drizzle melted chocolate over wax or parchment paper, aluminum foil or plastic wrap in a lattice pattern. Allow to cool and harden, then carefully place next to flan.
  3. Fresh Mixed Berries
Top flan with mixed berries and fruit of your choice: blueberries, blackberries, raspberries, sliced strawberries, pomegranate seeds, etc.
  4. Tropical Fruit
Top flan with chopped pineapple, mango, strawberry and shredded coconut.
  5. Sugar Dates and Pecans
Top flan with chopped pitted dates rolled in sugar and chopped pecans.
  6. Banana and Cookie Crumble
Top flan with crushed vanilla wafers or other cookie of your choice and sliced bananas.
