Rice Pudding with Fresh Cranberry Jam

This incredibly easy 4-ingredient recipe for homemade cranberry jam comes together in just 10 minutes! Try it with Senor Rico® Rice Pudding. It’s the ideal combination of sweet & tart flavors, and it’s perfect for the holidays!

Ingredients

  • 1 (8 oz) Señor Rico® Rice Pudding
  • 1 cup fresh cranberries
  • ¼ cup water
  • 1 tbsp chia seeds
  • 6 tbsp sugar

Instructions

  1. In a food processor or blender pulse cranberries and water until smooth.
  2. Transfer the mixture to a small saucepan, and add the chia seeds and sugar. Cook over medium-high heat, stirring constantly, for 3-5 minutes or until the amount of liquid has reduced by half.
  3. Spoon jam into a glass jar with a tight fitting lid, and let it cool to room temperature.
  4. Add jam to rice pudding. Serve cold or hot.
