This Pomegranate Jelly, Meringue, and Tapioca Pudding Parfait is wonderfully bright, light and quite sweet. Full of texture and flavor, this beautiful dessert will not leave you disappointed. Just use Señor Rico® Tapioca Pudding to make this dessert simply delicious!

Ingredients

  • 1 pound pomegranate
  • 1/2 pound sugar roughly 1 cup, adjust to taste (for jelly)
  • Señor Rico® Rice Pudding
  • 3 egg whites, room temperature
  • 1/4 teaspoon vanilla
  • 1/4 cup sugar (for meringue)

Instructions

  1. Prepare the pomegranates by removing their seeds from the flesh.
  2. Place the fruit in a saucepan with a tiny bit of water (or lemon juice if you prefer). Bring to a simmer.
  3. Add sugar to the pot and stir to dissolve. Feel free to add between 1/2 cup and 2 full cups of sugar based on your own tastes.
  4. Simmer the jam for about 5 minutes until it begins to set.
  5. In a medium bowl mix egg whites, vanilla, and sugar until thick and smooth.
  6. Place meringue in a piping bag.
  7. Layer pomegranate jelly, tapioca in a serving glass and top with peaks of meringue. Toast meringue with cooking torch (optional). Enjoy
