Impress your guest this summer with this amazing Almondmilk Pudding Icebox Cake. Use Lakeview Farms® Vanilla Bean Almondmilk Pudding, pound cake, and berries to make this elegant dessert.

VB Icebox Cake

Ingredients

  • Lakeview Farms® Vanilla Bean Almond Milk Pudding
  • pound cake (pre-made)
  • 1 cup whipped topping
  • strawberries
  • blueberries
  • white chocolate chips (optional)

Directions

  1. Fold 3 Lakeview Farms® Vanilla Bean Almond Milk Pudding cups into 1 cup whipped topping. Cover and place in refrigerator.
  2. Slice pound cake into 3 sections.
  3. Slice strawberries in quarters.
  4. In a small loaf pan, place bottom layer of pound cake. Next place strawberries and blueberries on top of pound cake. Pour half of the pudding mixture on fresh fruit. Place middle layer of pound cake on top of pudding then layer more berries and pudding. Next put on the top layer of the pound cake. Cover and freeze overnight.
  5. For best result, take a knife and loosen the edges to release the cake from the loaf pan. Soften for 10 min and serve.
