Tiramisu Rice Pudding
Product Used: Señor Rico® Rice Pudding
Blend the rich espresso flavor of the classic Italian dessert in this indulgent and creamy rice pudding.
Ingredients
- 18oz Señor Rico® Rice Pudding (a little over 2 8oz containers)
- 1 cup mascarpone cheese
- 6 tsp espresso coffee
- 9 ladyfingers
- about 1 cup mocha coffee or espresso for soaking ladyfingers
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- cocoa powder
Instructions
- In a bowl, mix Señor Rico® Rice Pudding with 6 teaspoons of espresso. Stir in ¼ cup mascarpone.
- Dip ladyfingers in mocha coffee or espresso and arrange evenly on the bottom of an 8-inch pie dish.
- Pour espresso rice pudding over ladyfingers evenly and refrigerate for at least 2 hours or overnight.
- Pour cream in a mixing bowl and mix on medium-high speed until soft peaks form. Add ¾ cup mascarpone and mix well until combined. Add powdered sugar 1 tablespoon at a time, mixing well after each addition.
- Spread whipped cream cheese mixture over rice pudding. Dust with cocoa powder and serve.
