Rice Pudding Topped Sweet Potato

You’ve probably heard of sweet potato rice pudding, but have you tried simply topping your baked sweet potato with creamy Señor Rico® Rice Pudding? This warm comfort food will make you never want to go back to your old sweet potato eating ways.

- sweet potato
Instructions
- Oven: Preheat oven to 400º F. Scrub and wash sweet potato thoroughly with cold water. Dry completely with a paper towel. Pierce the top of the sweet potato with a fork about 5-6 times and lightly butter if desired. Place on a baking sheet lined with foil and bake until tender for 45 minutes to 1 hour.
Microwave: Scrub and wash sweet potato thoroughly with cold water. Dry completely with a paper towel. Pierce the top of the sweet potato with a fork about 5-6 times and lightly butter if desired. Microwave on high for 5 to 10 minutes until tender, rotating halfway through. - Let the potato cool enough to eat and cut open. Spoon Señor Rico® Rice Pudding on top of potato. Top with additional cinnamon if desired.
