Rice Pudding Stuffed French Toast

Wake up to this decadent French toast filled with creamy rice pudding and topped with warm maple syrup.

Ingredients

  • 1 8oz container of Señor Rico® Rice Pudding
  • 1 loaf of French bread cut into 1.5 inch thick slices
  • 4 large eggs, lightly beaten
  • ¾ cup half and half
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar
  • Butter or oil for frying
  • Maple syrup for serving

Instructions

  1. Prepare the bread by cutting a pocket into each slice.
  2. Fill pocket with about 2 tablespoons of Señor Rico® Rice Pudding and press each slice closed.
  3. In a shallow dish, whisk half and half, eggs, cinnamon and sugar together until combined.
  4. Place filled bread into egg mixture, turning to coat each slice.
  5. Heat oil or butter in large nonstick frying pan over medium heat. Place bread in pan and cook until golden, about 2-3 minutes on each side.
  6. Serve with warm maple syrup.
