Rice Pudding Stuffed Baked Apples

Fill apples with Señor Rico® Rice Pudding with Caramel and bake for a delicious fall treat.

Ingredients

  • Señor Rico® Rice Pudding with Caramel
  • 4 large apples
  • 2 tbsp unsalted butter, softened
  • 1/8 cup brown sugar
  • 1/8 cup chopped walnuts or pecans
  • 1/8 cup raisins
  • ¾ tsp cinnamon
  • ½ cup water
  • Caramel sauce (optional)
  • Powdered sugar for topping (optional)

Instructions

  1. Preheat oven to 350º F. Using a paring knife, remove the stem, seeds, and cores of the apples to make a deep hole for the filling.
  2. Combine brown sugar, butter and cinnamon in a small bowl and mix well. Add nuts and raisins.
  3. Spoon a small amount of mixture into the bottom of each apple if desired, or drizzle in caramel sauce. Spoon Señor Rico® Rice Pudding With Caramel into apples until almost full and then top with sugar and nuts mixture.
  4. Add water to a small baking dish and place apples on top. Bake for about 40-45 minutes or until apples are tender when pierced with a fork. Allow to cool before serving.
  5. Drizzle caramel sauce on top of apples or sprinkle with powdered sugar if desired.
