Rice Pudding Stuffed Baked Apples
Product Used: Señor Rico® Rice Pudding with Caramel
Fill apples with Señor Rico® Rice Pudding with Caramel and bake for a delicious fall treat.
Ingredients
- Señor Rico® Rice Pudding with Caramel
- 4 large apples
- 2 tbsp unsalted butter, softened
- 1/8 cup brown sugar
- 1/8 cup chopped walnuts or pecans
- 1/8 cup raisins
- ¾ tsp cinnamon
- ½ cup water
- Caramel sauce (optional)
- Powdered sugar for topping (optional)
Instructions
- Preheat oven to 350º F. Using a paring knife, remove the stem, seeds, and cores of the apples to make a deep hole for the filling.
- Combine brown sugar, butter and cinnamon in a small bowl and mix well. Add nuts and raisins.
- Spoon a small amount of mixture into the bottom of each apple if desired, or drizzle in caramel sauce. Spoon Señor Rico® Rice Pudding With Caramel into apples until almost full and then top with sugar and nuts mixture.
- Add water to a small baking dish and place apples on top. Bake for about 40-45 minutes or until apples are tender when pierced with a fork. Allow to cool before serving.
- Drizzle caramel sauce on top of apples or sprinkle with powdered sugar if desired.
