Celebrate southern style with these mini shrimp and grits appetizers. They’re easy to put together and look amazing.
1 package of Gracious Grits® Cheese Grits
1 lb raw shrimp, peeled and deveined
1 large clove of garlic, minced
1 tsp Cajun seasoning
1 tbsp lemon juice
salt and pepper to taste
1 tbsp oil or butter for sautéing
chives for garnish
Add cooking oil to a large nonstick skillet. Over medium heat, add shrimp and garlic. Sauté for 2-3 minutes until shrimp is almost pink, stirring often. Add lemon juice, Cajun seasoning, and salt and pepper to taste. Cook for about 2 more minutes or until shrimp turns pink.
Cook Gracious Grits® Cheese Grits in the microwave according to package directions. Spoon portions into individual glasses (mini martini or champagne glasses, shot glasses, etc.) and top with a few pieces of shrimp each. Garnish with chives.
