Mexican Chilaquiles

Senor Rico Crema Mexicana 15oz

Make chilaquiles for a south of the border weekend breakfast.

Ingredients

  • Señor Rico Crema Mexicana
  • 1/4 cup vegetable oil
  • 8 small corn tortillas*
  • 1 cup mild enchilada sauce
  • 1 to 1-1/2 cups Mexican cheese blend, shredded
  • Cilantro chopped (optional)
  • Sliced avocado (optional)
  • Sliced fresh jalapeno pepper

Instructions

  1. Heat oil on medium high heat in a skillet.
  2. Cut tortillas into 4 wedges (like tortillas chips).
  3. In a small saucepan, heat the enchilada sauce and chilies.
  4. Once oil is hot enough, fry the tortillas until golden in several batches.
  5. Add enchilada sauce.
  6. Serve on plates sprinkled with the shredded cheese.
  7. Drizzle on Señor Rico® Crema Mexicana and garnish with cilantro and sliced avocado jalapeño if desired.

* TIP: It will help if your tortillas are a little dry. If they are fresh, cut them into wedges and put in a warm oven for a few minutes to dry them out, then proceed.
