Mexican Chilaquiles
Product Used: Señor Rico® Crema Mexicana
Make chilaquiles for a south of the border weekend breakfast.
Ingredients
- Señor Rico Crema Mexicana
- 1/4 cup vegetable oil
- 8 small corn tortillas*
- 1 cup mild enchilada sauce
- 1 to 1-1/2 cups Mexican cheese blend, shredded
- Cilantro chopped (optional)
- Sliced avocado (optional)
- Sliced fresh jalapeno pepper
Instructions
- Heat oil on medium high heat in a skillet.
- Cut tortillas into 4 wedges (like tortillas chips).
- In a small saucepan, heat the enchilada sauce and chilies.
- Once oil is hot enough, fry the tortillas until golden in several batches.
- Add enchilada sauce.
- Serve on plates sprinkled with the shredded cheese.
- Drizzle on Señor Rico® Crema Mexicana and garnish with cilantro and sliced avocado jalapeño if desired.
* TIP: It will help if your tortillas are a little dry. If they are fresh, cut them into wedges and put in a warm oven for a few minutes to dry them out, then proceed.
