Cook up these incredibly good chicken enchiladas and top them with a zesty, creamy sauce made from Fresh Creations® Mexicali Dip.
Ingredients
- 1 lb chicken breast, diced (use shredded deli roasted chicken if desired)
- 1 medium onion, minced
- 1 Tbsp. vegetable oil
- 8 (8″) flour tortillas, softened
- 11⁄2 cups grated Mexican cheese blend, divided
- 1⁄4 cup butter
- 1⁄4 cup flour
- 1 (15oz) can chicken broth
- 1 cup Fresh Creations® Mexicali Dip
- 1 jalapeño pepper, sliced
- sliced black olives for garnish
Directions
- Preheat oven 400º F.
- Heat oil in a large frying pan over medium-high heat and cook chicken and onion together until chicken is done. Skip this step if using deli roasted chicken.
- Divide chicken evenly between 8 tortillas. Add 1 1/2 Tablespoons cheese to each tortilla.
- Coat a 9″ x 13″ baking dish with non-stick cooking spray. Roll enchiladas and place seam-side down in dish.
- Melt butter in a medium saucepan and stir in flour to make a roux. Cook, while stirring until bubbly and gradually whisk in chicken broth. Bring to a boil, stirring frequently.
- Remove from heat; stir in Fresh Creations® Mexicali Dip. Pour sauce evenly over enchiladas.
- Top with remaining 3/4 cup cheese and bake for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly. Garnish with peppers and olives and serve.
