Mexicali Dip Enchiladas

Product Used: Fresh Creations® Mexicali Dip

Cook up these incredibly good chicken enchiladas and top them with a zesty, creamy sauce made from Fresh Creations® Mexicali Dip.

lb chicken breast, diced (use shredded deli roasted chicken if desired)

medium onion, minced

Tbsp. vegetable oil
  • 8
 (8″) flour tortillas, softened
  • 11⁄2
 cups grated Mexican cheese blend, divided
  • 1⁄4 
cup butter
  • 1⁄4 
cup flour
  • 1 
(15oz) can chicken broth
  • 1 
cup Fresh Creations® Mexicali Dip
  • 1
 jalapeño pepper, sliced
  • sliced black olives for garnish


  1. Preheat oven 400º F.
  2. Heat oil in a large frying pan over medium-high heat and cook chicken and onion together until chicken is done. Skip this step if using deli roasted chicken.
  3. Divide chicken evenly between 8 tortillas. Add 1 1/2 Tablespoons cheese to each tortilla.
  4. Coat a 9″ x 13″ baking dish with non-stick cooking spray. Roll enchiladas and place seam-side down in dish.
  5. Melt butter in a medium saucepan and stir in flour to make a roux. Cook, while stirring until bubbly and gradually whisk in chicken broth. Bring to a boil, stirring frequently.
  6. Remove from heat; stir in Fresh Creations® Mexicali Dip. Pour sauce evenly over enchiladas.
  7. Top with remaining 3/4 cup cheese and bake for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly. Garnish with peppers and olives and serve.
