Flan Cupcakes

Product Used: Señor Rico® Caramel Flan

These cupcakes may look simple on the outside, but when you bite into them you get a mouthful of creamy caramel custard!

Ingredients

  • Señor Rico® Caramel Flan (about 4 8oz containers for 24 cupcakes)
  • Boxed cake mix (white or vanilla, usually makes 24 cupcakes)
  • Frosting (white, cream cheese or buttercream)
  • Ground cinnamon (optional)
  • Caramel syrup (optional)

Instructions

  1. Prepare cupcake mix and bake following directions on package (or make your own).
  2. Using a mixer, beat flan together until smooth. Set aside.
  3. After cupcakes have cooled slightly, use an apple corer or a knife and cut a small hole into the center of each cupcake (do not go all the way down to the bottom). Scoop out any extra cupcake crumbs and save the top of the cupcake you cut out.
  4. Fill hole with flan using a teaspoon or a decorating bag. Finish it off with caramel syrup if desired and place cupcake top back over hole, trapping the filling inside. Repeat for each cupcake.
  5. Once all cupcakes are filled and cooled, frost cupcakes using frosting of your choice. Sprinkle on ground cinnamon and caramel syrup drizzle if desired. Refrigerate any uneaten cupcakes.
