Churro Waffles with Rice Pudding
Product Used: Señor Rico® Rice Pudding
Serve this fluffy version of the popular Mexican treat alongside Señor Rico® rice pudding for brunch. Add fresh fruit and you’ve got a new tradition!
Ingredients
- Señor Rico® Rice Pudding
- 2 cups flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 tablespoons white sugar
- cinnamon powder
- 2 eggs
- 1 ½ cups milk
- 1/3 cups melted butter
- 1 teaspoon vanilla extract
- syrup
For churro topping:
- 1 cup white sugar
- ½ cup melted butter
- ¼ – ½ cups cinnamon powder (to taste)
Instructions
- Preheat waffle iron.
- In a large bowl, mix together flour, baking powder, sugar, and salt. Set aside.
- In a separate bowl, mix together your churro topping: sugar and cinnamon. Set aside.
- In another bowl, beat eggs together. Stir in milk, melted butter, and vanilla. Pour wet mixture into dry mixture. Add a few shakes of cinnamon. Beat until well blended.
- You can melt your butter for the churro topping before or after this step. Spray waffle iron with cooking spray; fill iron with batter. Cook waffles until crisp and golden.
- Once fully cooked, pour melted butter over both sides of waffles and then immediately dip both sides into churro mixture.
- Serve with Señor Rico® rice pudding as a side and fresh fruit, if desired. Add pats of butter and syrup to your liking.
