Caramel Apple Rice Pudding

Pair the decadence of caramel apples with the sweet creamy goodness of rice pudding for a fantastic holiday dessert.

Ingredients

  • 1 8oz container of Señor Rico® Rice Pudding or Rice Pudding with Caramel
  • 1 medium apple peeled and chopped
  • 1/8 cup sugar
  • ½ tsp lemon juice
  • 1 tbsp butter at room temperature
  • 1/8 cup apple cider
  • 2 tbsp heavy whipping cream
  • pinch of salt

Instructions

  1. Combine sugar and lemon juice in a medium nonstick skillet. Stir over medium heat until sugar dissolves and syrup is a medium amber color. Add butter and swirl until melted then add cider and bring to a boil. Add apples and simmer until tender, stirring often. Add cream and boil until sauce thickens. Remove from heat and allow to cool to room temperature. (Can be made one day ahead and warmed before using.)
  2. Layer Señor Rico® Rice Pudding and caramel apples in a serving dish. Makes one to two servings.
