Apricot-Cashew-Coconut Tapioca Pudding Frozen Pops

Add dried apricots, coconut and cashews to Señor Rico® Tapioca Pudding and freeze for a gourmet popsicle that will appeal to both adults and children.
Ingredients
- Señor Rico® Tapioca Pudding (about 3 3.75oz containers)
- Dried apricots finely chopped
- Cashews finely chopped
- Shredded coconut
- One 6 3oz frozen pop mold
Instructions
- Mix together Señor Rico® tapioca pudding, apricots, cashews, and coconut. Fill each mold and freeze for at least 2-3 hours or until solid.
